Carbonara sauce is one of the most known and delicious Italian recipes, although this recipe is not similar to the traditional one, it has nothing to envy regarding taste and texture, besides it's easier and quicker to make.

Carbonara sauce has its origins in Italy we all know that, but what most people don't know is that it's not made with heavy cream, the truth is that it's made with eggs specifically with the yolk. The yolks are mixed with the cooking water of the spaghettis and whisked together to form an emulsion that resembles heavy cream. I've made the carbonara sauce the traditional way and it's good, but it's a little tricky, you need to have some experience in the kitchen.

The problem about making it the traditional way is that is complicated, because it's necessary to be quick enough to generate the emulsion before the yolks cook completely. That why (I guess) everyone prefers to use heavy cream

Ham spaghettis?

In the keto diet there are a ton of ingredient's swaps, like almond flour for wheat flour, cauliflower mash for potato mash, or zucchini noodles for regular pasta. In this case we are swapping pasta for ham spaghettis!

This idea came to my mind when I was in Germany a few weeks ago. I was at some supermarket and saw these packages with something similar to fresh pink spaghettis, I look closer and I realize it was ham cut into strip. It seems that they use it for salads, or that's what the package said.

I thought I could use them to make a pasta dish and the first thing that came to my mind was a good tomato sauce like this one Nutritious and healthy tomato sauce, but meat plus meat it a little redundant, so another option was carbonara sauce which normally has a little ham anyway, the only difference is that this time is pretty much all ham instead of a few pieces hahaha

This recipe is absolutely delicious, but it also has a good amount of nutrients (more than the 50% of the RDI) like vitamin B1 and A and minerals like calcium, phosphorus and selenium. It also has between a 20 and a 45% of the RDI of other nutrients like the vitamins B2, B3, B6, B12, D and choline and zinc.

Ham spaghetti with carbonara sauce

  • 1 Cup heavy cream
  • 1/2 Cup grated parmesan cheese
  • 1 minced garlic clove
  • 300 gr ham cut into thin strips
  • 2 Tbsp butter

  1. Melt the butter in a pan
  2. Fry the garlic until it's golden brown, be careful to not burn it garlic burns easily
  3. Add the heavy cream to the pan
  4. Cook at high heat for about 5 minutes
  5. Add the parmesan cheese and mix quickly to get a lightly thick sauce
  6. Turn the heat to low and add the ham spaghetti
  7. Mix well to coat the spaghettis evenly
  8. To serve you can add a little bit more of parmesan cheese on top
